These devices provide information on the protein / peptide composition of a food product. The Stuart rocking agitator is suitable for stirring chemicals during sample preparation, but also for the uniform coloration and discoloration of single or two-dimensional electrophoresis gels. Thanks to the Quantum CX5 imager (Vilber Lourmat) the acquisition, analysis and image processing of an electrophoresis gel can be performed. These analyzes should inform us about the alteration (or not) of the food matrix and the determination of markers of freshness and / or authenticity.
